Light spring salad with pomelo

Spring salad with pamelo

Ingredients:

  • Cucumber (very large)
  • Pomelo (1 / 2-1 / 3 of the fruit)
  • Canned corn (1 can, 350g)
  • Chicken (1 and 1/3 pieces)
  • Soy sauce
  • Salt
  • Black pepper (optional)
  • Lettuce (for dressing)

P.s: Pomelo should be sweet. If it is slightly tart or bitter, it will spoil the taste of the salad. Instead, you can use mandarin or sweet orange. The main rule is sweet citrus fruit.

Directions:

  1. Wash cucumber; Cut the cucumber into thin quarters. Spread it on a boil;
  2. Brake down pomelo into small pieces. Send it to the cucumber;
  3. Add corn to the bowl;
  4. Mix all the ingredients, salt and pepper;
  5. Cool boiled chicken fillet. Tear it into fibers and add to the salad;
  6. Mix it and season with soy sauce;
  7. Transfer the salad on the lettuce, when serving.

Salad with beet and mushrooms

Salad with beet and mushrooms

Ingredients:

  • Boiled beet – 500 g
  • Any mushrooms – 400 g
  • 2 onions
  • Garlic 2-3 cloves of garlic
  • Vegetable oil – 100 ml
  • Salt – 2 tsp
  • Sugar – 1 tsp
  • Balsamic vinegar – 1tbsp

Directions:

  1. Chop one onion and fry it in a pan with vegetable oil until transparent;
  2. Add diced mushrooms to the onions, stir it, add 1 tsp. of salt and fry until cooked. Let it cool;
  3. Peel the beet and cut it into cubes;
  4. Chop the second onion, garlic and add to the beet. Connect the cooled beet and mushrooms;
  5. Add balsamic vinegar, sugar, salt and mix your dish.

Salad with beet and mushrooms is suitable for any side dish or as a separate dish.

French salad with orange and avocado

P.S.: Try to slice orange into very thin slices, and onion – into very thin feathers.

Ingredients:

  • Green lettuce leaves – 300 g
  • Orange
  • Onion (preferably red) – ½
  • Avocado
  • Chopped roasted almonds or other nuts (optional)

Dressing:

  • Vegetable oil – ½ cup (120 mL)
  • Vinegar – ¼ cup (60 ml or 4 tablespoons)
  • Sugar – 1 tbsp
  • Honey – 1 tbsp
  • Salt – ½ tsp
  • Paprika – ¼ tsp

Directions:

  1. Segment orange then cut its segments crosswise into thin slices. Cut avocado into thin slices. Cut onion into thin feathers. Mix in a bowl chopped lettuce, slices of avocado, orange and onion;
  2. In a separate bowl, mix together all the ingredients for the dressing, beat all with a fork. The dressing can be done in advance and refrigerate;
  3. Before serving, season the salad with the dressing. Mix it and serve.

Salad of carrots and apples with seeds

Ingredients:

  • 2 pieces of carrot
  • Apple cider vinegar – 5 tsp
  • Black pepper
  • Parsley – 10 g
  • Walnut – 4 pieces
  • Green apple – 2 pieces
  • Pumpkin seeds – 50 g
  • Sea salt
  • Lettuce – 1 bunch
  • Balsamic vinegar – 5 tsp

Directions:

  1. Grate apples and carrots, sprinkle with lemon juice;
  2. Slightly roast walnuts and pound. Add balsamic vinegar and apple cider vinegar, a pinch of salt and pepper;
  3. Connect lettuce with grated apples and carrots;
  4. Dress the salad and stir it. Put on a plate, sprinkle with sunflower seeds and coriander.

Sweet and sour salad with beans

Ingredients:

  • Beans – 0.5 kg
  • 1 Red chili pepper
  • 1 clove of garlic

Sauce:

  • 1 clove of garlic
  • Honey – 3 tbsp
  • Soy sauce – 1 tbsp
  • Dry white wine – 3 tbsp
  • Salt and pepper

Directions:

  1. Cook beans until tender. If the beans are very young, then they have to be cooked for no more than 7-8 minutes after boiling. Drain it, cool and peel;
  2. Cut pepper into large cubes, chop garlic;
  3. Mix all the ingredients;
  4. Prepare the sauce: mix honey with soy sauce and wine. Add crushed garlic and season with salt and pepper. Drizzle with sauce and eat with pleasure.

Vinaigrette without potatoes

Ingredients:

  • Beetroot – 1 pc
  • Carrot –1 pc
  • Pickles – 2 pcs
  • Sauerkraut – 200 g
  • Vegetable oil
  • Salt to taste

Directions:

  1. Wash and boil beet and carrot in salted water. It will take about one hour;
  2. Once vegetables are cooked, they must be peeled and cut into cubes;
  3. Put chopped vegetables in a large bowl. Then, take pickles, cut them into the same size as beet and carrot and add them to the bowl;
  4. Press the sauerkraut, to get rid of excess juice, and put it in the bowl with other ingredients;
  5. Add salt, vegetable oil and mix everything.

Salad “Ruby”

Ingredients:

  • 2 large tomatoes
  • 1 large beet
  • 1 bell pepper
  • Red onion
  • Arugula – 100g
  • Walnuts (shelled) – 0, 5 cup
  • Salt
  • Vegetable oil

Directions:

  1. Thoroughly wash beet and pepper, individually wrap in foil and bake at 200 C until ready (pepper – 15 min., beet – about an hour). Remove the pepper from the oven, cool not unwrapping. Peel the cooled pepper and remove the core, cut into small squares. Wash tomatoes, keep in boiling water for 30 seconds, then rinse with cold water and peel. Cut the tomatoes into 4 pieces, remove seeds, cut into the same squares as the pepper;
  2. Peel the cooled beetroot and cut into small cubes;
  3. Cut onion into half rings;
  4. Finely chop nuts (in advance dry on a hot pan);
  5. Wash and dry arugula, put in a salad bowl, add the chopped vegetables, salt, pepper, season with butter and sprinkle with the nuts.

Ingredients:

  • Boiled chicken fillet – 2 pc
  • 3 Boiled eggs
  • Canned beans – 1 can (420 g)
  • 2pc of  sweet and sour apples
  • Salt and pepper
  • Sour cream

Directions:

  1. Cut chicken and eggs into cubes;
  2. Add beans;
  3. Peel apples and remove seeds, grate. Add to the salad;
  4. Salt, pepper and season the salad with sour cream.

Ingredients:

  • Fresh spinach (preferably young) – 400 g
  • Radish – 150 g

Dressing:

  • Vegetable oil – 1/3 cup
  • 1 lemon (squeeze the juice)
  • Mustard – 1 tsp
  • 1 clove of minced garlic
  • Salt and pepper

Directions:

  1. Break spinach leaves into several pieces. Do not cut it with a knife;
  2. Cut radishe into thin slices;
  3. Mix all the ingredients for the dressing in the pot with a lid. Close the lid and shake well to obtain a smooth mass. Dress the salad just before serving.

Salad “Whisk”

This salad is a storehouse of vitamins and minerals. It perfectly cleanses the intestines. Eat this salad 2-3 times a week instead of dinner and your intestines will improve their work.

Ingredients:

  • Cabbage – 100 g
  • Beet – 100g
  • Carrots – 100g
  • Apple – 100g
  • Lemon juice
  • Olive oil
  • Dill, spices
  • Prune – 50g (optional)

 Directions:

  1. Chop cabbage. Grate beet and carrot. Mash with your hands to release juice. Add grated apple, chopped and soaked prune.
  2. Sprinkle with your favorite spices and dill. Squeeze lemon juice to the salad, add olive oil.
